
Honeycake Noir
A fully mousse honeycake, with buckwheat — the darkest of the seven, mineral, with notes of licorice and tobacco — at its center. The honey is caramelized for eight to ten hours. Rye-buckwheat sourdough sponge, smoked black-currant crémeux, pecan-bourbon praline, velvet in burnt-wood tone. No decoration. The name, and one drop of gold — the apiarist’s seal.
