Two halves of French meringue made on Greek thyme honey, between them a crémeux on sheep yogurt and quince confit — quince, the under-used autumn fruit — and a pinch of piment d’Espelette for warm heat. Swicy without chili: the heat comes from Basque pepper and thyme, not caramel or sugar.
